Make healthy eating easier. How? I love this idea. Have a “use me” section in your fridge and your freezer.

Let’s back up a bit though. One of the things I teach my community is to make healthy eating faster and easier by cooking large quantities of food and using it multiple times. Some people hate the idea of “leftovers,” but that’s not what I’m talking about. Forget the overcooked vegetables reheated in the microwave for the second or third time. Totally not what I’m getting at here.

I’m talking about making large quantities of roasted veggies in the oven. (get the recipe here) and a large quantity of wild rice, lentils and beans (get the recipe here). You can make healthy eating faster and easier, and dishes like these can be used for almost any meal. For breakfast, some chopped roasted veggies heated with a little rice and beans in a skillet can be the base for an omelette or a frittata. You can just crack an egg over the mixture too. What could be easier than that?

For lunch, some of the chopped veggies over greens is a great start to a salad. For dinner, you can sauté the veggies with the rice and beans for a quick side dish or even a vegetarian main dish.

The “use me” section is something I read about recently. The great part about this idea is that it solves the dilemma of finding something in a container a week later in the back of the fridge that would have contributed to a meal, but you forgot about it. I think we all do it. I know I do. Going forward, I am designating a shelf for the “use me” section to prevent this from happening.

It’s a great idea for the freezer too. Who doesn’t find mystery stuff in their freezer that is so freezer burned it’s unusable?

My goal working with my community is to make healthy eating easier, more economical and delicious. Try cooking larger quantities of healthy foods and designating a “use me” section in your fridge and freezer; I’ll bet that helps you eat more healthfully more easily.
